What's "Hashi-yasume Yuzu confit" ?
Hashi-yasume Yuzu confit is a sweet and sour jam-like yuzu product that also contains a small amount of salt. Hashi-yasume Yuzu confit is made by using Yuzu, which was cultivated in (former Higashiya village, Nishitani village, and Nakatani village) in the southern part of Kokura-minami Ward, Kitakyushu City, Fukuoka Prefecture.
"Hashi-yasume" is literally translated as "chopstick rest" in English. It is used as a side dish when drinking sake along with Japanese food, and literally means putting chopsticks on the table and taking a rest to refresh the taste. Hashi-yasume Yuzu confit will surely make your daily dining table fun! Also, you can enjoy it as a snack wirh a cracker, cheese or as a friend of wine or whiskey.
＜Story behind the development of the product＞
● In Kokuraminami Ward, there are Gouma bamboo shoots and Kokura beef as national brands. However, there were no souvenirs that travelers could easily take home.
For this reason, in order to promote the area of Kokuraminami Ward and beautify the satoyama by harvesting yuzu. We named the taste that we wanted to produce storable special products as "Chopsticks rest Yuzuka" and started manufacturing it at "Hiraodai Nature Town" in Kitakyushu National Monument of Japan's three major karsts "Hiraodai".
There was no name for the taste, so I decided to name it so that I could imagine how to eat it and the ingredients. Since it is a processed product that is not found anywhere else, it also has a bookmark written in both Japanese and English that shows how to eat it, and it also supports visitors from overseas. At present, it is difficult to visit the city because of the Corona disaster, but I hope you can come to Kitakyushu in Fukuoka Prefecture someday.
● In this term, the dealers were forced to close temporarily due to the corona virus, and the production in the next term was uncertain. It was picked up by a local TV station, and thanks to that, many orders were placed over the phone and online, and the stock was exhausted. Somehow, this year, the 9th year of production has become possible. Then, with the hope that more people would eat it across national borders, we started selling it at Tocoo Mall.
